Funny fat: The sweet potato is not really a potato but a knol. Other names for the sweet potato are batatas, yam and boniato. And as his name suggests, this tuber is indeed sweeter than the ordinary potato.

Originally, the knol comes from Mexico, but today it is often used in average Dutch cuisine. He is also popular in Suriname. The sweet potato is full of vitamins and other healthy substances.

The sweet potato with chicken and spinach is worth a few reasons: lots of vegetables, it’s easy to prepare and it’s a unique recipe that you do not often encounter. Do you read?

What do you need:

  • 300 g sweet potato
  • 100 g chicken dish (go for organic!)
  • 50 g of white beans
  • 75 g chestnut champignons
  • 150 g of spinach
  • 1 cup of mozzarella
  • 1 onion
  • 1½ clove of garlic
  • 1 electric kettle
  • ½ tb cumin
  • ½ tb nutmeg
  • 1 el za’atar herbs
  • Oil
  • A little pepper

Method:

  • Preheat the oven at 180 degrees.
  • Cut the sweet potato into small cubes. Put in a pan with water and bring to the boil. Note: The pieces may become bitter, but be careful not to cook them.
  • Cut the onion and garlic nicely. Tip: Squeeze the knife side of your knife until it snaps. Then you can remove the sheet without effort.
  • Cut the mushrooms into slices and the chicken in cubes.
  • Bake the onion in a frying pan. Then add the mushrooms and garlic. After a few minutes, shake the mixture into an oven dish.
  • Put the chicken with oil in the same pan. If the chicken turns brown, add the mushrooms, onion, garlic, ketchup, nutmeg, cumin and pepper. Let it go for a while.
  • Time to pour the sweet potato. Spread the oven dish with some oil and put the chicken in it.
  • Bake the spinach into a pan so that it smells good. Add the sweet potato.
  • Rinse off the white beans and add to the pan. Then you add the zaat herbs.
  • Spoon the spinach and sweet potato pieces on the chicken and mushrooms.
  • Lay thin slices of mozzarella on top of the dish. A little bit of za’atas spices over it and you are as good as done. Now let the oven work for 20 minutes. If a brown crust is created, it’s time to table.
